You can get the stress component normal to the surface by always creating the local co-ordinate system and setting one of the axes normal to the given surface. This is the most preferred and easy way. Even the local co-ordinate systems can be generated using object generator.

Since, you want a method other than the local coordinate system method You might want to try the method in which strain is analyzed using a strain gauge (Single element meshed surface with zero stiffness and minimal thickness created at the locations of interest.)Instead of asking strain as output, you can ask stress in the particular direction as the output.
The following steps might guide you for the same-
Create a surface at desired locations and update the geometry.
Define the element types and stiffness by inserting commands (et, matid , 181 and keyopt , matid ,1 ,2 )
Defining the appropriate contacts.
Meshing the surface such that it has only one element.
Adding element triads to the solution output to get respective axes to scope the result for.
Adding the respective stress and scoping the result to the the solution co ordinate system and axis along with respective geometry.
