When postprocessing a wall that has a thickness but does not have shell conduction enabled, the Temperature… category provides three options: the temperature of the adjacent fluid / solid cells are stored as Static Temperature; the temperature of the wall surface itself is stored as Wall Temperature; and the temperature of the surface that is separated from the fluid / solid cells by the wall thickness is stored as Wall Temperature (Thin).
