I configured the names of the coordinates, the coordinates themselves, and set up the plotting of x, y, z in the Report definition as follows:

However, the results plotted by the plot are different. Why is this happening? I definitely selected 'off' in snap on probe click of the point surface.

What selection method did you use when applying the probe?

Can you try using Vertex Average report type rather than Area Average? This will yield more accurate values when you click Compute.
