I was wondering if there is a way to simulate a wooden beam with one sided charring (burning), including material decay and density change and other material properties.

The best way to do this is by using a combined porous media and UDF approach. The approach is documented in the following paper:

I am not sure if you have access to the ANSYS knowledge base articles, but a small test case can be found in Article 000087117
