I would like to know if ANSYS Rocky with DEM-CFD coupling allows for in-domain conjugate heat transfer.

Rocky will handle the particle-particle & particle-wall heat transfer. With full coupling to CFD the Fluent software will handle fluid-particle and fluid-wall heat transfer.

What about conjugate heat transfer? Heat transfer inside a solid?

By solid I mean a full body such as cylindrical pin completely solid inside the bed surrounded by fluid and granular solids, can ansys then do the heat transfer within that solid domain?

Yes, and there are both tutorials & examples in Learning covering this.
