I read online (and found) that the amplitude at the plane source is 1 V/m. However, upon placing a monitor nearby the source, I found the maximum amplitude of the electric field in the x and y directions to be about 1.4. How is this possible? I'd be willing to share code/data upon request.

It is possible in the monitor when there is a device there: the strong reflection/diffraction can produce interference, and some device can have focus capability so any value of the electric fields can be possible.Â
To confirm, you can simulate an empty space and check the amplitude. It might not be exactly what is in theory, it should be very close.
If you still have questions, please post some screenshots of the device and simulation settings.
