How can I open multiple .stl files in Spaceclaim into one construction? When I select multiple .stl files during the open popup they all open into a different construction tab, see attatched picture.

Use add file from Assembly to add multiple files in the same session.

That's usually a good idea so you know what you've got. You can then copy & paste into one model. Otherwise check the import options as it should be possible.
