The angle of incidence is not available with Wave port, If you want to assign angle of incident, you can use Incident wave as an excitation.
Please go through the HFSS Excitations -> Incident wave section in the HFSS help document for more details or you can refer to online documentation here-

The Floquet port is an infinitely periodic wave port, which supports angle of incidence.
(there is a delay setup for the slave Floquet port in every UV direction. However, I do not remember, does it create an oblique wavefront, or just a virtual delay when postprocessing the cell into of virtually infinite array)
