Please de-select the Global Range as well and input the desired range in Min and Max spaces. This will enable you to visualize the contour in defined ranges only. You can also de-select Boundary values if the boundary condition values are not of interest here.

Can’t the software automatically detect the maximum and minimum values over the entire simulation time and apply them to the contour?

Ansys EmployeeIt can do it. But since the minimum and maximum values of the domain are bound to change as you run the simulation, the ranges in contour too, will change.
