Is there a possibility in fluent to create a text file with the information about the used models, setups and the important information of the used grid (cellcount, type of cells)?

In 2021R1 you have the simulation Report which provides a good summary and includes result section too.

Unfortunately, I'm using 2019R3, and if I don't miss anything, that feature ist not available there.
Is there an other option to do something similar in 2019R3?

No in that granularity but you can rely on the Fluent Input Summary which does not contain all information, though. Just search after than in the Guide.

There's the Input Summary under Run Calculation in the ribbon. The output's not as easily read though.
