I am working on a Fluent simulation with the following steps:
Modify the viscous resistance using a UDF.
Use the adjoint solver to initialize and calculate (observable = pressure drop).
Compute the adjoint sensitivity of pressure drop with respect to viscosity.
I have completed step 1, but I am not sure how to proceed with steps 2 and 3. I would greatly appreciate any guidance you can provide.

So as I understand, you are defining viscosity w.r.t. UDF, I believe this could be temeprature dependent. Now since you have flow run the simulation, you can start adjoint calculation straight away with observable as pressure drop. Adjoint will give you sensitivity of geometrical feature for pressure drop.
