I would like to ask to find the inlet and outlet temperature values and also the pressure drop and inlet values. Is it better to use the mass weighted average or area weighted average formula, if the simulation is used on a shell and tube heat exchanger?

You need to set some of the above to give the solver something to work from.
Mass/Area weighted both are "best" for different reasons. Have a look at the maths definition and tell me why you think one or the other is better for what you want to know.
