Once size field is calculated, you can not change size functions. To change size functions, you can deleted computed size field by using 'Delete' option in the same panel you have shown above. 

You can connect 2 meshes if face mesh on both faces at the interface are exactly same. You will need to use Boundary → Merge nodes option for that. If they are not exactly same then please proceed with non conformal mesh.
