Hello Maximilian,

One reason temperture and heat transfer coefficient vary as a function of position and time is due to the nature of the fluid flow conditions at the wall you have in your mechanical model.  Instead of a Transient Thermal mechanical model, use Fluent to build a transient thermal fluid flow simulation that includes the solid body that experiences the heat transfer.  By meshing the fluid outside the wall, the flow of fluid will cause heat to transfer at the wall as a function of position and time and the rate of transfer will depend on the velocity of fluid flow.
