What is the objective of your simulation? The reason I ask is to guage how important that variation of Young's modulus in the elastic part of the stress-strain curve is. For linear elasticity, you can input only a single Young's modulus and Poisson's ratio. Is it possible to approximate that part with a single Young's modulus? For the plastic portion, generally you would enter the yield stress and a hardening law.
