Depending on set up you may find using interpolation files to work well where the geometry changes. Otherwise, I'd run for a single speed & converge, then write case & data. Change the boundary condition, do NOT initialise and run more iterations, save new case & data etc.  By starting from a good solution, albeit for a different flow speed or angle, the number of iterations required is typially lower than when starting from an initialised condition.
