Hello Miguel, 

Its not possible to parametrize the thickness of the Sheet metal from the options shown below in the properties panel:

You can refer the Using a Bend Deduction Table where you define combination of Thickness and VeeDieWidth like one shown below:

Although this is for bend radius and not directly for thickness. Comma-Separated Value File 

Another way could be to create a mid-surface and assign a thickness to it in Mechanical. Let me know if this helps.
