For this, you can go to the Structure Tree/Beam Profiles folder and right click on concerned profile. Choose Edit Beam Profile and it will open it in new tab. Here, you can edit the profile dimensions through Driving Dimensions under Groups tab. Save the Profile design and close it. The profiles gets updated in the working file with modified dimensions.

Can I create my own profile and use it as beam cross section?

Yes, you can do it. In a fresh file, first sketch the profile. Then extrude it using Pull command to create a solid. One important step is to change the color of the face you want to use as the profile. Make sure that this color overrides the color of the solid. Then save the design as an SCDOC file.
Now to use this profile as your beam's cross section, click Profiles, select More Profiles, and then browse to locate the SCDOC file.
