Data on post processing surfaces is interpolated using cell/facet values, check the documentation to see if any details on methods is given. This is why we often create interior surfaces in the mesh if we plan post processing before turning on the geometry tool. 

I would use the most straightforward method to get the data I wanted: as I don't know why you chose profiles over xy lines or what you intend to do with it I can't recommend either approach.
