The single node that you mention is not the reason for the increased electric field. By having a finer mesh, you will get a more detailed analysis. This is why increasing mesh resolution leads also to an increased magnitude of the electric field (in specific areas). The expectedly increased magnitude of electric field is seen because electric field lines tend to concentrate at the edges of a conductive object (field enhancement) and in your case the conductive object is the distribution of pollution on the insulator.
