Hello,Â
Is there any reference where I can refer to understand what is stored in CAS and DAT file formats ?

I think it's covered in the Fluent User's Guide. Roughly, the case contains the mesh (including cell IDs and locations), boundary settings and all zone IDs. The data file contains the various scalar & vector values linked to the cell ID. Hence always saving case and data when finishing a run.Â
