What is the difference between coupled, rigid and deformable options for point mass? If I would like to attach a rigid body as a point mass to a flexible bracket with geometry scoped at the mounting holes for the bracket, which behavior is appropriate?

Choose then the one that you think might represent the real situation best. If none does then model the component as it is, so without any approximations (point mass).
