Mesh configuration for cylindrical fluid domain

I'm considering different options for a mesh for hypersonic flow around a cone body in Fluent to help improve convergence in the simulation, and was wondering what options I have for sizing the mesh relative to a specific boundary and how to apply different element types throughout the domain (eg hex instead of tet). Is there any capability for utilizing hex elements in a cylindrical or rectangular domain instead of the default tetrahedral elements? When I apply the hex method to the domain the meshing tool usually fails using both cylindrical and rectangular domains (probably due to the difference in angle between the cone surface and edge of the fluid domain). Also, are there any options for dynamically sizing the mesh along the length of the domain? I would like to refine the mesh near the front face of the fluid domain, but retain a larger element size towards the tail end of the cone where the boundary flow is more fully developed. Currently, I am roughly accomplishing this by dividing the domain into several bodies and sizing each one independently, but I am wondering if there is a way to dynamically change the element size in a specific axis (for example, defining a linear function for element size in the x direction). A cut of the domain I'm working with is shown below.

Staff are unable to advise on hypersonic applications so I'll leave the wider community to comment. For super sonic I'd review the various courses and tutorials in Learning and the documentation.
