      When simplifying a 3D mesh to a 1-element thick sweep mesh for performing faster mesh independence studies, as usual, you should focus on node count. However, since if you are looking at comparing mesh statistics, you should limit your focus to skewness and orthogonal quality. These two metrics are not influenced by the thickness of the sweep mesh. Other metrics like element quality and aspect ratio are affected by the thickness of the sweep mesh.
