Hello,

Default it will just load the System Coupling results on interfaces. To see all the variables, you have to load the results of both participants in Ensight and it can be loaded as:

 

1. Load results on Interfaces.
2. Loading Mechanical results in Ensight: File > Open 

 

3. Loading Fluent results in Ensight: File > Open

You can create a plane in Ensight using clip option. Please refer following tutorial Creating Parts with EnSight.
To create a scene as in the image, create a vector plot and pressure contour plot.
