It (max min variation) is because of the stress singularity at fixed location and between them 2 (at contact location) – look at stresses away from these points and say in the middlle of the 2 members.

Even better is to use beam elements (1D line elements), where this does not happen (singularity). For the right wall (0.4 mm gap) one can usse a translational joint at the end of the copper rod with a stop of x=0.4 mm.
